Busy butcher

Brad Jones goes to work each morning with a smile on his face. After all, he's heard every conceivable joke there is about a butcher who works in a hospital.

That's right, a meat cutter.

When my friend told me about Jones the butcher I thought he was pulling my leg. Then my immediate thought was 'yuck.' Who would buy meat from a butcher in the basement of a large city hospital? It was just too weird.

Then I thought for a moment. Jones could be on to something.

It all started out when he applied for the butcher's job at the Misericordia hospital. It was filled by another candidate. But he was hired as a cook.

Three days later, the new butcher packed it in, and Jones got the call. More than 12 years later, he's still moving sides of beef into his cooler.

Jones spends his days cutting meat for hospital use, not only for the Misericordia but also for the Grey Nuns and Edmonton General hospitals which are also run by the Caritas Health Group.

And one day he got the brilliant idea of offering rib eyes, tenderloin, hamburger and stewing beefs to the staff. Soon the word had spread like medicine through an IV tube.

Now doctors, nurses, and patients are lining up for Jones' culinary delights.
When he first started he was doing about $2,000 of business a month. Now he's averaging up to $12,000 a month.

He's also catering to school lunch programs, seniors homes, and even supplying product for special outside functions. Needless to say, this little gold mine easily covers his salary and then some. And all with no advertising, just word of mouth.

The best part about this is that each order is custom cut to meet your needs, with no minimum or maximum orders. Jones admits it's not Safeway or Save-On Foods but what he specializes in is individual service. If you want one or two pork chops per package, then you've got it.

All you have to do is call the Misericordia, get an order form from Jones and you're on your way to meat heaven.

You're probably concerned about how expensive this individual service will cost you. Take heart (or liver or kidney!)

It's actually five per cent to 15% less than what you'd pay at the store. There's no overhead so he can pass the savings on to you. And what savings!

A piece of tenderloin is only $18.95 a kg compared to more than double that in the store. And he's now offering two pages of items including flavoured ribs (barbecue, hot, mild, Cajun, honey garlic) chicken nuggets, fish and stir-fry meats.

Remember he's in a hospital where low-fat meals are important, so all of his cuts are very lean. In fact, one woman called to complain that she had to add extra oil to her lean ground beef order.

"That made my day," he says.

Right now he's averaging about 20 calls for orders a day. Some days the phone doesn't stop ringing.

"Never in my wildest dreams did I ever think it would grow this big."

His favourite story centres around a trip to the bank. He went to apply for a mortgage. Under the heading of occupation he put, "Meat cutter, Misericordia."

The bank official looked at the application and said, "You've got to be kidding."

His mortgage was approved!
