BREAKFAST IN A BAG

Here we are in the season of camping and being outdoors, therefore any extra tips in regards to quick and easy meals are always appreciated. This fantastic idea came from a couple that spend a great deal of time in Mexico, exploring canyons and travelling on dune buggies, thus meals have to be packed into small places and be able to carry as little as possible. But don’t worry, a dune buggy is not required equipment for this hearty meal. You can do this in your backyard, on the camping trip or even for a family reunion or an after morning ‘feed the guests’ breakfast.

The day before prepare the ingredients for your outdoor meal.

-chopped onion, green pepper, ham, cooked bacon, grated cheese, mushrooms, chives

You can add any other ingredients you wish.

Place each item into a container for safe storage.

Keep refrigerated or in a cooler until time for the meal.

Now this is where the fun begins. Breakfast time and you have a hungry crew. Place a large pot on a stove ( a camp cook stove or a roaring fire)--- bring water to a boil and keep it boiling for the remainder of the meal. Keep the pot filled with water so there is plenty of room for your food to cook.

Now you need plastic refrigerator zip lock bags (don’t use the sandwich kind-- they are too thin, it has to be the freezer kind). Use a black felt pen and write your name on the outside of the bag. Crack 2 eggs into the bag, throw away the shells and proceed to add ingredients from the items prepared the day before. Yes, it looks a little on the ‘gross’ side but the end result is well worth it. Sprinkle in salt, pepper or any other spices you wish. Hot chili peppers for the hearty souls. Mix it well in your baggie, zip it closed--- get out as much air as possible. Place the bag into the boiling water and let it cook. Usually takes about 20 to 30 minutes, depending on the altitude. Use tongs to remove bag from the water. The eggs look like an omelet when removed from the bag. Place on a paper plate, use disposable cutlery and ‘Presto’-- a hearty meal with little cleanup or fuss. Perfect for those lazy days of summer.

A fun filled activity; something both children and grown-ups will love to participate in. Great for all ages and occasions. After all food tends to taste much better when it has been cooked outside. Have fun and Enjoy!!
