Baked French Toast

Baked French Toast (CFRN Dec 30)

Serves 6-8

Ingredients:
6 cups                         cubed to 1 inch, stale panettone or white bread 
                                    
(Panettone is Christmas Italian Bread which can be
                                      found at most grocery stores, including Superstore 
                                      and specialty Italian food stores)
5                                    eggs
2 cups (500 mL)        eggnog
¼ cup (55 gr)              sugar
2 tsp (10 mL)              vanilla extract
1 Tbsp (15 mL)          cinnamon
¼ cup  (50 mL)           melted butter, cooled to room temperature

Pre heat oven to 300° F (150° C).

Beat the eggs until frothy.  Add the eggnog, sugar, vanilla, cinnamon and melted butter.  Place bread into a butter greased 9 x 13 baking pan. Pour egg mixture over the bread and allow to rest for 30 minutes.  Bake for 75-90 minutes, until light golden brown.  Cut into pieces and serve with warm maple syrup, your favourite Alberta made jam or preserves. Serve with ham, bacon or sausage.
