4 chicken breasts, slightly pounded, to same thickness
Marinade
2 cups (500ml) Italian dressing * 1 Tbsp (15 ml) hot sauce, or more** ¼ cup (50 ml) seasoning salt 2 Tbsp (30 ml) black pepper 1 Tbsp (15 ml) cumin 2 Tbsp (30 ml) lime juice 2 Tbsp (30 ml) Worcestershire sauce 2 Tbsp (30 ml) soya sauce
Toppings
8 strips of bacon, cooked 4 Monterey Jack cheese slices 4 leaves of lettuce ½ cup (100 mL) spicy salsa
Mix all marinade ingredients together and marinade chicken for 2-3 hours.
Grill the chicken for 5 minutes per side or until done. Top with Monterey Jack Cheese, bacon and finish with your favourite spicy salsa. Try one of Brad’s favourites - Guasacaca Spicy Salsa - available at the Edmonton City Centre Farmer’s Market.
