CommentsThis is a great recipe to prepare before you go camping.
2 cups (500 mL) flour 1 1/2 cups (375 mL) cornmeal 1 tbsp (15 mL) baking powder 1 tsp (5 mL) baking soda 1 tsp (5 mL) salt 1/2 cup (125 mL) butter, melted 2 1/2 cups (625 mL) buttermilk 1/4 cup (50 mL) honey 6 eggs
Prepare Ahead: Blend all dry ingredients, and put them in a Ziploc bag. Blend all wet ingredients, put in a Ziploc bag and freeze.
In a mixing bowl place the dry ingredients and blend together well. Add all of the wet (defrosted) ingredients from the Ziploc bag. Mix until all of the ingredients are combined. Do not over mix.
Pour batter on to a hot griddle surface and cook just like pancakes, flipping when golden brown. Serve drizzled with some Alberta honey or your favourite syprup. Serves 4.
